1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
3 cardamom pods
1 teaspoon cumin seeds
1 cup diced onion
1 cup Basmati rice
2 cups water
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/2 cup frozen peas
3 tablespoons cilantro, chopped
1. Saute onion, cinnamon, cloves and cumin seeds in butter over medium low
heat for 5 minutes. Add water, rice and salt. Bring to a boil and cover pot.
Simmer until rice is done, about 25 minutes.

1 red or yellow onion, cut into 1/2-inch pieces
1 large green, red or yellow bell pepper, cut into 1/2-inch pieces
Cooking spray
Sauce:
1 cup evaporated nonfat skim milk or fat-free half and half
1 tablespoon best quality peanut butter
2 to 2-1/2 teaspoons imitation coconut extract

1 can (10 1/2 oz.) fat free chicken gravy
1 tbsp. Dijon mustard
2 tsp. honey
4 cups hot cooked rice, cooked without salt or fat
Spray a large skillet with non-stick cooking spray and heat
1 min. Add chicken and cook until browned. Set chicken
aside.
Stir in the gravy, mustard and honey. Heat to a boil. Return
chicken to skillet. Cover and cook over low heat 5 min. or
until done. Serve over rice. Serves 4.

1 4 ounces jar prune baby food
3 egg whites
1 cup sugar
1 teaspoon salt
1 teaspoon vanilla
1/2 cup flour
1/4 cup nuts -- (optional)
Preheat oven to 350F. Spray an 8-inch square baking pan with cooking spray.
Combine all ingredients. Add nuts if desired. Bake about 30 minutes or
until springy to touch. Cool on rack.

No posts for the 15th or 16th. I got sent out of town for work at the last minute and I have no scale! Oh, the agony! I know I'm not eating much (putting in seriously long hours) but I'm not working out either. We'll see what the scale shows when I return home!
Day 14 - Weigh In - 2 weeks, 2.5 lbs

Still no change in weight. I just can't believe I haven't lost *any* more though. BUT - I have been stepping up the workouts so I am probably putting on muscle. Just would be nice to see that ol' scale nudge down a bit
I'm really craving some fresh veggies for dinner tonight. I'll have to run by the market and see what I can get. Maybe a big plate of steamed veggies for dinner? Too bad I can't slather them in butter

Day 13 - Weigh In - A Revelation

You know, I've been whining about not losing any more lbs (btw - still no change) but it hit me this morning as I stepped on the scale...
I'm maintaining! I lost 2.5 lbs and I've been maintaining it. Which shows me that my healthy lifestyle changes are going to work! Granted, I still want to see the pounds come off - but this really made me feel good about what I'm doing. Once I do lose the pounds, then it looks like I'll have success in keeping them off!!
